Sourcing and building a relationship with a quality vendor takes time and communication. I have used many of the same vendors for nearly 20 years.A good example is one of the seafood purveyors I use. I speak with him daily and he fills me in on what will be in the market the next day. He knows that I am only interested in super fresh and clean seafood. Since we speak daily we have built a rapport with each other and enjoy the sourcing and ordering process. He’ll call me as soon as he hears of something special to see if I’m interested, and how much of it I might need. Today he called me in the early morning and let me know that black fin tunas were being caught locally as well as some good sized pompano. I trust his judgment and have not sent back a single fish that I have ordered from him in as long as I remember! I am sure if I did he would never question it. A big part of it for me is that I build long lasting friendships with my purveyors and it makes the entire product sourcing and ordering process a lot of fun.
