Baked Mandarin Oranges with Mint
Servings: 4

Ingredients:
• 4 mandarin oranges
• 2 tbs acacia honey
• 3 squeezed oranges
• 1 oz butter
• 2 tsp sugar
• 5 fl oz crème fraiche
• 1 oz raw sugar
• 1 vanilla pod
• Fresh mint
Method:
Preheat the oven to 300°.
Carefully peel the mandarin oranges and place them in the mini
round casseroles with the honey and squeezed orange juice.
Cook for about 15 minutes in the oven.
Add the sugar and butter for each mini round casserole. Set
aside for a few minutes then add 2 chopped mint leaves.
Slice the vanilla pod lengthways and scrape out the seeds. Add
the raw sugar and the vanilla into the cream and whip.
Gently heat the mini round casserole, covered, in the oven for 5
minutes. Serve with a tablespoon of whipped cream and fresh
mint.
